The Waukesha County Fair’s Annual Carcass Contest is a valuable educational opportunity for youth livestock exhibitors. This clinic is designed to give participants a deeper understanding of carcass evaluation, including how livestock are processed and graded based on quality, yield, and marketability.
Youth will learn what it means to raise animals that meet consumer expectations for high-quality meat, and how thoughtful production practices can result in a more desirable, profitable product. The event is led by meat processing professionals and industry experts, with real carcasses used for evaluation.
